breakfast burritos

Gavin has spent countless mornings hiking several blocks from work to spend up to $3 on the wrapped offerings of various establishments. At some point (most likely when he arrived at some coffee shop, only to find out they were sold out of vegetarian burritos) he determined that not only could he make a simple and tasty burrito himself, but he figured that he could probably make a little profit if he wanted to go to the trouble of offering them to his co-workers. This plan has so far gotten to the beta testing phase. He spent one evening making about 20 burritos which were taken into Gavin's and Robin's offices the next morning to be given away. Feedback was very positive and it was determined that people would definitely pay $2 for these little gems. It was also determined that there was no time to undertake this venture so... it ain't gonna happen.

Start by washing the taters. Leave the skin on as that is one of the best parts. Then cut them up into small cubes and dump all of the cubes into a pot of water. Boil until soft (10-15 minutes).

While the potatoes are cooking you can prepare the rest of the fixins. Warm up the green chile on the stove over low heat. Grate the cheese. Defrost/cook the frozen veggie sausage in the microwave (if you are using it), and then chop/crumble it up.

Once the potatoes are cooked, drain the water and warm a large skillet on the stove over med-low heat. Prepare a tortilla by placing it on the skillet for a a minute or less on each side. This will soften it up and make it easier to fold. Next take the warm tortilla and spoon some of the potatoes onto it. Next add some cheese, a dollop or two of the warmed green chile, and sprinkle some of the veggie-sausage crumbles. All you have to do now is "smack it! flip it ! rub it down! Oh no!!!"

Rolling instructions for the burrito challenged:

  1. With tortilla in front of you, pile contents horizontally across the shell about a third of the way up while keepng about an inch open on either side.
  2. Fold the bottom of the tortilla over the contents.
  3. Fold over the left and right sides.
  4. Roll burrito away from you
